It all started here, behind the teppanyaki griddle. The flames, the knives twirling, the laughter of guests. For the chef, cooking has never been just a job: it's a show, an encounter.
Aiko Sushi
On the Plateau, he co-founded Aiko Sushi and welcomed a loyal, curious clientele. Under his lead, Aiko became a reference and the chef a name passed between friends.
Poké Star
Innovation drew him behind the Eaton Centre. At the time, barely five poké spots existed in Montreal. He was among the first to believe in it. The pandemic closed that chapter.
Aji Sushi Mtl
His little gem, matured over the years. Refined Japanese cuisine, a 4-seat omakase counter, a reinvented omakase also served at tables, and above all: an address that stays accessible to everyone.

Aji: taste
The restaurant's name carries the kanji 味, meaning taste, flavour, essence. Every piece is pressed to the minute to capture that essence.
Takumi: the artisan
Over 30 years of practice, the same rigour. Fish aged the edomae way, rice fanned by hand, aged red vinegar.
Kokoro: the heart
Cooking is not a trade, it's an encounter. The 4-seat counter and the tables are designed so every guest feels at home.
